Pumpkin Up-Side Down Cake
- 1 (15 ounce) can pumpkin (Libby's easy pumpkin pie mix)
- 2 large eggs
- 23 cup evaporated milk
- 1 (18 ounce) box yellow cake mix
- 12 cup butter
- 12 cup pecans
- 8 ounces Cool Whip
- Mix together first three ingredients.
- Pour in a 9x11 cake pan.
- Sprinkle dry cake mix over pumpkin mix.
- Cut butter in pieces over cake mix.
- Spread pecans over cake evenly .
- Bake at 350 for 45-60 minutes.
- when cake is cool completely, spread cool whip over top.
