Calas (Rice Donuts) Recipe

  1. Mash rice and cold to lukewarm.
  2. Soften yeast in hot water and stir into lukewarm rice; mix well.
  3. Cover and let rise overnight.
  4. In the morning, add in Large eggs, flour, sugar, salt and nutmeg.
  5. Beat only till smooth.
  6. Let stand in a hot place for 30 min.
  7. Drop by Tbsp.
  8. into deep warm oil and fry till golden brown, about 3 min.
  9. Serve sprinkled with confectioners' sugar or possibly sugar mixed with cinnamon.
  10. Yields 2 dozen.
