Calas (Rice Donuts) Recipe
- 1 1/2 c. Cooked brown rice, (cooked with extra water to make very soft)
- 1 pkt Yeast, active dry or possibly compressed
- 1/2 c. Hot water
- 3 x Large eggs, beaten
- 1 1/4 c. Sifted all-purpose flour
- 1/4 c. Sugar
- 1/2 tsp Salt
- 1/4 tsp Nutmeg Oil for frying
- Mash rice and cold to lukewarm.
- Soften yeast in hot water and stir into lukewarm rice; mix well.
- Cover and let rise overnight.
- In the morning, add in Large eggs, flour, sugar, salt and nutmeg.
- Beat only till smooth.
- Let stand in a hot place for 30 min.
- Drop by Tbsp.
- into deep warm oil and fry till golden brown, about 3 min.
- Serve sprinkled with confectioners' sugar or possibly sugar mixed with cinnamon.
- Yields 2 dozen.
