Quick Chocolate Puddin' Cookies
- 2 qt. baking mix
- 1-3/4 cups unsalted butter, softened
- 1 pkg. JELL-O Chocolate Instant Pudding
- 7 each eggs
- 1 cup sugar
- 1 Tbsp. vanilla
- Place all ingredients in large bowl of electric mixer fitted with paddle attachment.
- Beat on low speed 2 min.
- or until well blended, occasionally stopping mixer to scrape side of bowl and beater.
- Use #70 scoop to drop balls of dough into parchment-lined full sheet pans, placing 4 doz.
- scoops in each pan.
- Flatten to 1/8-inch thickness with tines of fork.
- Bake in 350F-standard oven for 10 to 13 min.
- or until tops look dry.
- Cool completely on wire racks.
- Store in tightly covered container at room temperature.
