Lentil & Sausage Stew Recipe
- 3 cups lentils, rinsed and drained (I use black lentils)
- 1 pound sweet Italian sausage or bratwurst
- 16 oz frozen sweet corn or 1 14oz can corn
- 8 ribs celery, chopped
- 2 medium onions, chopped
- 11 cups spring water
- 1 tsp sea salt or kosher salt
- Black pepper to taste
- Rinse the lentils.
- Remove sausages from casing and place in heavy 4 quart pot with tight lid.
- Lightly brown sausage and break into pieces.
- Add celery and onion to pot.
- Saute until vegetables soften.
- Pour in water.
- Add lentils, corn, salt and black pepper.
- Stir together, cover, and bring to boil.
- Reduce heat to low and simmer for about 2 hours.
- Remove lid for last 1/2 hour to thicken.
- Serve hot in bowls with a thick crusty bread and salad.
