Lentil & Sausage Stew Recipe

  1. Rinse the lentils.
  2. Remove sausages from casing and place in heavy 4 quart pot with tight lid.
  3. Lightly brown sausage and break into pieces.
  4. Add celery and onion to pot.
  5. Saute until vegetables soften.
  6. Pour in water.
  7. Add lentils, corn, salt and black pepper.
  8. Stir together, cover, and bring to boil.
  9. Reduce heat to low and simmer for about 2 hours.
  10. Remove lid for last 1/2 hour to thicken.
  11. Serve hot in bowls with a thick crusty bread and salad.
