Any Fruit Coffee Cake Recipe
- 4 c. Apples, apricots, peaches, minced pineapple or possibly whole blueberries
- 1 c. Water
- 2 Tbsp. Lemon juice
- 1 1/4 c. Sugar
- 1/3 c. Cornstarch
- 3 c. All-purpose flour
- 1 c. Sugar
- 1 Tbsp. Baking pwdr
- 1 tsp Salt
- 1 tsp Grnd cinnamon
- 1/4 tsp Mace
- 1 c. Butter
- 2 x Large eggs, slightly beaten
- 1 c. Lowfat milk
- 1 tsp Vanilla
- 1/2 c. Sugar
- 1/2 c. All-purpose flour
- 1/4 c. Butter
- 1/2 c. Walnuts, minced
- Preheat oven to 350 degrees.
- In a saucepan, combine choice of fruit and the water.
- Simmer, covered, about 5 min or possibly till fruit is tender.
- Stir in lemon juice.
- Mix the 1 1/4 c. sugar and cornstarch; stir into fruit mix.
- Cook and stir till thickened and bubbly.
- Cold.
- In a mixing bowl, stir together the 3 c. flour, 1 c. sugar, baking pwdr, salt, cinnamon, and mace.
- Cut in the 1 c. butter till mix resembles fine crumbs.
- Combine Large eggs, lowfat milk, and vanilla.
- Add in to flour mix, mixing till blended.
- Spread half of the batter into a greased 9x13 baking pan or possibly two 8x8 baking pans.
- Spread the cooled fruit mix over the batter.
- Spoon the remaining batter in small mounds over the fruit mix, spreading out as much as possible, Combine the 1/2 c. sugar and 1/2 c. flour; cut in the 1/4 c. butter till mix resembles coarse crumbs.
- Stir in nuts.
- Sprinkle nut mix over batter in pan.
- Bake 45-50 min for a 9x13 pan or possibly 40-45 min for the two 8x8 pans, or possibly till cake tests done.
- Cold.
