Cashew Chicken
- 6 to 8 chicken breasts, cut in bite size pieces
- 1 egg
- 1 can Pet milk
- 1 pkg. cashews
- 6 cups chicken broth
- 6 tbsp. corn starch
- 3 tbsp. soy sauce
- 1 tbsp. monosodium glutemate
- 5 to 6 scallions (green onions)
- Shredded lettuce
- Rice
- Beat eggs and milk; soak chicken pieces several hours or over night.
- Drain and roll in flour, fry until brown.
- Drain on paper towel.
- Mix sauce (broth, corn starch, soy sauce, sliced green onions and MSG).
- Simmer in sauce pan until thickened.
- In casserole dish layer chicken, shredded lettuce and sauce (two layers each).
- Put nuts over top.
- Serve over rice.
