Cashew Brittle
- 3 cups sugar
- 1 cup white corn syrup
- 1 cup water
- 12 cup butter
- 2 12 cups cashews
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- Boil sugar, syrup, and water to a hard boil, 254 degrees in a heavy saucepan.
- Add butter and peanuts and cook to 300 degrees or hard crack, stirring constantly.
- Remove from heat and add vanilla and baking soda, stir well and pour onto a cookie sheet lined with parchment paper.
- When cool break into pieces and store in an air-tight container.
