Sweet Maple Parfaits
- 1/4 cup pecan pieces
- 1/2 cup maple syrup, divided
- 1 cup milk
- 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
- 3/4 cup thawed Cool Whip Whipped Topping, divided
- 12 Nilla Vanilla Wafers, lightly crushed (about 1/2 cup)
- Combine pecans and 2 Tbsp.
- of syrup in small microwaveable bowl.
- Microwave on HIGH 2 min.
- or until thickened, stirring every 30 sec.
- Spread onto large piece of waxed paper or foil; cool completely.
- Meanwhile, pour milk into medium bowl.
- Add dry pudding mix.
- Beat with wire whisk 2 min.
- or until mixture is well blended and starts to thicken.
- Add 1/4 cup of the remaining syrup; mix well.
- Gently stir in 1/2 cup of the whipped topping.
- Spoon 1 Tbsp.
- of the wafer crumbs into each of four dessert dishes; top each with 1/2 cup of the pudding mixture, 1 Tbsp.
- of the wafer crumbs and 1 Tbsp.
- of the remaining whipped topping.
- Top with pecans.
- Drizzle evenly with remaining 2 Tbsp.
- syrup just before serving.
- Store leftover desserts in refrigerator.
