Cheesy Potato-Bacon Gratin

  1. Heat oven to 350 degrees F.
  2. Cook and stir bacon in large skillet on medium heat until crisp.
  3. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp.
  4. drippings in skillet.
  5. Drain bacon on paper towels.
  6. Add onions to drippings in skillet; cook and stir 5 min.
  7. or until tender, adding garlic for the last minute.
  8. Add milk and cream cheese; cook and stir 2 min.
  9. or until cream cheese is completely melted and mixture is well blended.
  10. Whisk in sour cream, thyme and pepper.
  11. Add potatoes; mix lightly.
  12. Cover; cook on low heat 5 min.
  13. Place half the potato mixture in 13x9-inch baking dish sprayed with cooking spray; cover with layers of half each of the bacon and shredded cheese.
  14. Repeat all layers.
  15. Bake 40 to 45 min.
  16. or until potatoes are tender and top is golden brown.
