Cheesy Potato-Bacon Gratin
- 8 slices bacon, cut into 1-inch pieces
- 1 onion, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 4 cloves garlic, minced
- 1 cup milk
- 1 pkg. (250 g) Philadelphia Brick Cream Cheese, cubed
- 1 cup sour cream
- 1 Tbsp. fresh thyme leaves
- 1/4 tsp. freshly ground black pepper
- 2 lb. (900 g) red potatoes (about 6), peeled, thinly sliced King Sooper's 5 lb For $1.88 thru 02/09
- 1-1/2 cups Touch of Philadelphia Shredded Creamy Mozza Cheese
- Heat oven to 350 degrees F.
- Cook and stir bacon in large skillet on medium heat until crisp.
- Remove bacon from skillet with slotted spoon, reserving 2 Tbsp.
- drippings in skillet.
- Drain bacon on paper towels.
- Add onions to drippings in skillet; cook and stir 5 min.
- or until tender, adding garlic for the last minute.
- Add milk and cream cheese; cook and stir 2 min.
- or until cream cheese is completely melted and mixture is well blended.
- Whisk in sour cream, thyme and pepper.
- Add potatoes; mix lightly.
- Cover; cook on low heat 5 min.
- Place half the potato mixture in 13x9-inch baking dish sprayed with cooking spray; cover with layers of half each of the bacon and shredded cheese.
- Repeat all layers.
- Bake 40 to 45 min.
- or until potatoes are tender and top is golden brown.
