Beef Flank Steak & Rice-Cranberry Pilaf
- 1/4 cup KRAFT Balsamic Vinaigrette Dressing
- 12 oz. extra lean beef flank steak Safeway 1 lb For $5.99 thru 02/09
- 6 fl oz (3/4 cup) orange juice
- 1 cup instant brown rice, uncooked
- 1/4 cup dried cranberries
- 1/4 cup PLANTERS Sliced Almonds
- 2 cups chopped frozen broccoli
- 2 cups chopped frozen cauliflower Safeway 1 lb For $1.99 thru 02/09
- 1 Tbsp. extra virgin olive oil
- 1 Tbsp. lemon juice Safeway 4 ct For $5.00 thru 02/09
- 4 fresh apricots, sliced
- 1 cup fat-free sorbet or sherbet
- 32 fl oz (4 cups) drinking water
- Pour dressing over beef; marinate 30 min.
- to overnight in refrigerator.
- Grill or broil beef 3 to 5 min.
- per side, or until cooked to desired doneness.
- Slice beef against the grain.
- Divide into 4 equal portions.
- Mix orange juice with 1 cup water in large saucepan; bring to boil.
- Stir in rice and cranberries; return to boil.
- Reduce heat to medium-low and cover.
- Simmer 5 min.
- Remove from heat and let stand 5 min.
- Stir in almonds just before serving.
- Steam broccoli and cauliflower as directed on package; drizzle with olive oil and lemon juice just before serving.
- Serve each person an apricot topped with 1/4 cup sorbet for dessert.
- Serve an 8 fl oz glass of water per person with the meal.
