Smokin Peach Chicken
- 6 boneless skinless chicken breasts
- 12 cup peach jam (homemade is best)
- 13 cup honey
- 1 teaspoon liquid smoke
- 1 teaspoon Montreal chicken seasoning
- 14 teaspoon allspice
- 14 teaspoon red pepper
- 1 tablespoon rice wine vinegar
- 1 tablespoon tomato paste
- 12 teaspoon fresh ground black pepper
- 12 onion
- Bake Chicken breasts in an open dish at 350 degrees for 20 minutes.
- Drain chicken juice and reserve.
- Mix.
- The glaze ingredients (except for the onion) together well.
- Set aside.
- Place 1 tablespoon of olive oil into a small pan, add onion and cook over med heat until carmelized.
- Then add the glaze mixture.
- Simmer for 1-2 minutes.
- Remove from heat.
- Paint each chicken breast with the glaze and return to the oven for ten minutes.
- Paint with the remaining glaze for 10 more minutes.
- Remmove from oven.
- Sprinkle with chopped parsley and cilantro if you wish.
