Fruit and Almond Basmati Rice

  1. Prepare rice according to package directions using butter or ghee, cumin seeds and salt.
  2. Once cooked, add over the top the dried fruit and almonds; do not stir.
  3. Place lid loosely over pot and let stand 10 minutes.
  4. Fluff with fork.
  5. To toast almonds: Spread in single layer on metal baking sheet.
  6. Bake in 350F oven 3 to 5 minutes or until lightly browned, stirring occasionally.
  7. (Watch carefully to prevent burning.)
  8. Set aside to cool.
