Fruit and Almond Basmati Rice
- 1 cup uncooked basmati rice
- water, according to package directions
- 2 teaspoons butter or 2 teaspoons ghee
- 2 teaspoons cumin seeds
- salt
- 34 cup mixed dried fruit, chopped
- 14 cup slivered almonds, toasted (see note below)
- Prepare rice according to package directions using butter or ghee, cumin seeds and salt.
- Once cooked, add over the top the dried fruit and almonds; do not stir.
- Place lid loosely over pot and let stand 10 minutes.
- Fluff with fork.
- To toast almonds: Spread in single layer on metal baking sheet.
- Bake in 350F oven 3 to 5 minutes or until lightly browned, stirring occasionally.
- (Watch carefully to prevent burning.)
- Set aside to cool.
