Authentic Italian Sauce

  1. In a deep sauce pan add your oil.
  2. Then brown your meat.
  3. As meat is Browning cut onion and peel your garlic.
  4. After meat is browned on all sides add onion and garlic.
  5. Scrape all the brown stuff on the bottom of the pan.
  6. (That's all flavor)
  7. Add salt and pepper to meat and veggies.
  8. Once onion and garlic are sauted add your cans of tomatoes (not paste).
  9. Crush the plum tomato with your fingers into the sauce.
  10. Stir , on med.
  11. heat let sauce cook for 20 min.
  12. Untill sauce is at a rolling boil.
  13. Then add basil, bayleaf, wine and paste.
  14. Let cook on med heat for 10-15 more minutes.
  15. Lower heat to a simmer and add suger to reduce acidity.
  16. Let cook for 3-5 hours to reduce to desired thickness stirring often.
  17. Scrape the sides and mixing it back into the sauce.
