Sausage Minestrone Recipe
- 1/2 pound bulk Italian sausage
- 1 c. minced onion
- 2 cloves garlic, minced
- 8 c. water
- 1 (28 ounce.) can Italian tomatoes
- 5 teaspoon beef flavor bouillon
- 4 teaspoon Italian seasoning
- 1/4 teaspoon pepper
- 2 med. carrots, sliced
- 1 can garbanzo beans, liquid removed
- 1 pkg. frzn cut green beans
- 1/2 (8 ounce.) pkg. spaghetti, broken
- Grated Parmesan cheese
- In large Dutch oven brown sausage, onion and garlic; pour off fat.
- Add in remaining ingredients except beans, spaghetti and cheese, bring to boil.
- Reduce heat, simmer uncovered 1 hour.
- Stir in beans and spaghetti, bring to boil.
- Reduce heat, simmer uncovered 10 min or possibly till spaghetti and green beans are tender.
- Serve with Parmesan cheese.
- Chill leftovers.
- Yield: 2 1/2 qt.
