Mango, Jicama and Raspberry Salad
- 1-1/2 gal. watercress
- 1-1/2 qt. jicama, peeled, julienned
- 1-1/2 qt. mangoes, peeled, pitted and julienned Whole Foods 2 ea For $4.00 thru 02/09
- 3 cups fresh raspberries
- 1-1/2 cups Kraft Balsamic Vinaigrette Dressing
- 3 cups manchego cheese, shaved
- 1-1/2 cups slivered almonds, toasted
- 1-1/2 cups red onions, thinly sliced
- Combine watercress, jicama, mangos and raspberries in large bowl.
- For each serving: Toss 1 cup (250 mL) of the watercress mixture with 1 Tbsp.
- (15 mL) of the dressing; place on serving plate.
- Top with 2 Tbsp.
- (30 mL) cheese and 1 Tbsp.
- (15 mL) each almonds and onions.
