Pineapple Sweet Potato Pudding Recipe
- 8 med. sweet potatoes, cooked and mashed
- 4 tbsp. butter
- Grated rind of 1 lemon
- 1/2 teaspoon salt
- 1 (16 ounce.) can crushed pineapple, liquid removed - reserved 1 c. syrup
- 1 c. heavy cream
- Put sweet potatoes in large bowl; add in butter, lemon rind, salt, the c. of reserved pineapple syrup and cream.
- Mix together and place in buttered casserole.
- Top with crushed pineapple.
- Bake in warm 450 degree oven for 15 min.
