Pineapple Sweet Potato Pudding Recipe

  1. Put sweet potatoes in large bowl; add in butter, lemon rind, salt, the c. of reserved pineapple syrup and cream.
  2. Mix together and place in buttered casserole.
  3. Top with crushed pineapple.
  4. Bake in warm 450 degree oven for 15 min.
