Blueberry Drop Cookies Recipe gayot
- 1/2 cup unsalted butter, at room temperature, plus butter for greasing the cookie sheet
- 1 cup sugar
- 1 egg, lightly beaten
- 1/2 cup milk
- Grated rind of 1/2 lemon
- 2-1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 2-1/2 teaspoons baking powder
- 1 cup blueberries
- Preheat oven to 350 degrees F. Grease a cookie sheet with butter.
- Cream the butter.
- Gradually add the sugar and mix well.
- Add the egg, continuing to beat.
- In a separate bowl, combine the milk and lemon rind and, in another bowl, combine the flour, salt and baking powder.
- Add the milk and flour mixtures alternately to the butter, beginning and ending with the flour.
- Gently stir in the blueberries.
- Drop by heaping teaspoonfuls about 1 inch apart onto the cookie sheet.
- Bake for 12 to 15 minutes, or until lightly browned.
- Yields 4 to 5 dozen cookies.
