Autumn Pumpkin Spice Muffins
- 2 cups all-purpose flour
- 13 cup sugar
- 23 cup packed brown sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 14 ginger
- 14 teaspoon baking soda
- 12 cup canned pumpkin
- 12 cup melted butter
- 13 cup buttermilk
- 2 eggs, lightly beaten
- Heat the oven to 400F.
- Grease 12 muffin tins or lined cups.
- In a large bowl: Combine all ingredients except for pumpkin, butter, buttermilk, and eggs.
- In seperate bowl, combine the rest of ingredients.
- Mix into the flour mxture until moistened.
- Spoon the batter into the cups.
- Bake about 20 minutes or until a toothpick comes out clean.
- Let cool before removing from the tins.
