Tarragon Shrimp Scampi
- 1/2 c. olive oil
- 2 onions, peeled and grated
- 4 garlic cloves, peeled and minced
- 1 small bunch fresh tarragon, finely chopped
- 1/2 tsp. salt
- fresh ground pepper
- 32 large shrimp, peeled and deveined
- juice 1 lemon
- In skillet, heat olive oil, saute onions and garlic over medium low heat for 3 minutes, add salt, pepper and tarragon. Saute for 1 more minute; do not let brown.
- Remove from heat and let cool. In large bowl, combine shrimp with the sauteed mixture and lemon juice.
- Let rest at room temperature for 30 minutes. Preheat the broiler; line a large broiler pan with aluminum foil. Place shrimp on the pan and spoon the onion mixture on each. Broil approximately 4 or 5 minutes.
- Shrimp will be pink and topping should be brown.
