McCarthy Family Fish Chowder
- 1 each onions sliced, chopped
- 6 each potatoes cubed, diced
- 1 1/2 pounds haddock fresh, back skinned
- 1/2 cup salt pork diced
- 1 pint water boiling
- 1 1/4 quarts milk
- 1 tablespoon salt
- 18 teaspoon black pepper
- Cook salt pork until brown, remove salt pork pieces and place in separate dish leaving salt pork oil in kettle.
- Now saute diced onion in the same kettle until brown.
- Add potatoes and 1 pint boiling water, simmer 10 minutes, add fish and simmer 20 minutes.
- Add milk, salt, pepper and pices of salt pork previously sauted.
- Heat to boiling and serve.
