Mixed Bean Hummus
- 1 can (19 fl oz/540 mL) mixed beans, drained, rinsed
- 1/4 cup olive oil, divided
- 3 Tbsp. fresh lemon juice Safeway 4 ct For $5.00 thru 02/09
- 1 clove garlic, minced
- 1 Tbsp. Kraft Smooth Peanut Butter
- 2 Tbsp. chopped fresh parsley
- Christie Wheat Thins 37% Less Fat Crackers
- Place beans, 3 Tbsp.
- of the oil, the lemon juice, garlic and peanut butter in food processor.
- Process until well blended.
- Spoon into serving dish.
- Drizzle with remaining 1 Tbsp.
- oil; sprinkle with parsley.
- Serve with the crackers.
