Crab Salad in Avocado Boats
- 1 pound Jumbo Lump Crab Meat
- 1 Red Bell Pepper, Diced
- 3 Tablespoons Parsley, Chopped
- 3 Tablespoons Mayonnaise
- 1 whole Lemon, Cut In Half
- 2 Avocados, Halved
- Salt And Pepper
- Old Bay Seasoning (to Garnish)
- In a large bowl mix together crab meat, red bell pepper, parsley, and mayonnaise.
- Squeeze half of a lemon into the mixture and season with salt and pepper.
- Split avocados; remove pits and shell.
- Squeeze other half of lemon on avocado halves and sprinkle with salt and pepper.
- Pile crab mixture into center of avocados.
- Sprinkle Old Bay on top.
- Serve with lemon wedges.
