Wild Herb Tart
- 2 ounces spinach
- 1 large leeks
- 4 each scallions, spring or green onions
- 4 tablespoons parsley leaves
- 5 large eggs
- 1/2 pint milk
- 1/2 pint cream
- Make the tart as in the Lobster Tart recipe, replacing the lobster with the greens, washed and shredded, but not cooked.
- Stir in the cheese before cooking.
