Chipotle BBQ Shrimp Tacos with Pickled Onions

  1. Heat Grill to Medium-High heat.
  2. Rinse onions under warm water; drain.
  3. Place in small bowl.
  4. Add half the lime juice; mix lightly.
  5. Mix cilantro, mayo and remaining lime juice until blended.
  6. Add to coleslaw blend in large bowl; mix lightly.
  7. Combine barbecue sauce and peppers.
  8. Thread shrimp onto skewers.
  9. Grill 4 to 6 min.
  10. or until shrimp turn pink, turning and brushing frequently with barbecue sauce mixture.
  11. Remove shrimp from grill; set aside.
  12. Add tortillas to grill; cook 30 sec.
  13. on each side or just until warmed.
  14. Remove shrimp from skewers; place on tortillas.
  15. Top with coleslaw and onion mixture; fold in half.
