Pumpkin Parfait

  1. Mix together the pumpkin & ice cream; refrigerate.
  2. Combine the brown sugar, cinnamon, nutmeg and allspice; mix well.
  3. Put to one side.
  4. Combine the cold water and gelatin; allow gelatin to dissolve.
  5. Once dissolved, add it to the sugar mixture while stirring constantly.
  6. Add the boiling water.
  7. As soon as all is dissolved, begin adding the pumpkin & ice cream mixture.
  8. Beat well.
  9. Spoon into Parfait glasses & chill.
  10. Top with whipped cream.
  11. Serve.
