Poorman's Creole

  1. Cook onion, celery, green bell peppers and garlic in hot oil until tender but not brown.
  2. Add tomatoes, tomato sauce and seasonings, and hominy.
  3. Simmer uncovered about 45 minutes.
  4. stirring occasionally.
  5. Mix cornstarch and 2 teaspoon water, stir into sauce.
  6. Add canned tuna simmer 5 minutes.
  7. Serve over rice.
