Poorman's Creole
- 12 cup onion, chopped
- 12 cup celery, chopped
- 12 cup green bell pepper
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 (1 lb) can tomatoes
- 1 (8 ounce) can tomato sauce
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 bay leaf
- 1 teaspoon chili powder
- 1 tablespoon Worcestershire sauce
- 1 (29 ounce) can hominy, drained
- 1 teaspoon cornstarch
- 2 (9 ounce) cans tuna (packed in water)
- 1 dash Tabasco sauce
- Cook onion, celery, green bell peppers and garlic in hot oil until tender but not brown.
- Add tomatoes, tomato sauce and seasonings, and hominy.
- Simmer uncovered about 45 minutes.
- stirring occasionally.
- Mix cornstarch and 2 teaspoon water, stir into sauce.
- Add canned tuna simmer 5 minutes.
- Serve over rice.
