sunshines cocoa cake

  1. for the cake, preheat oven at 350 and bake on 350
  2. meaure into shifter, sifted flour, baking powder, soda, salt, sugar, and cocoa.
  3. stir shortening (room temperature) just to soften.
  4. sift dry ingredients into bowl with shortening.add 3/4 cup milk and vanilla.
  5. mix until of flour is dampened.
  6. then beat 2 minutes with mixer on low speed or 300 steokes by hand.
  7. add 3 eggs (unbeaten) and 1/4 cup milk.
  8. beat one munite longer r 150 steokes.
  9. bake in 2 8" layer pans, lined on bottom with wax paper, about 35 minutes.
  10. For frosting, frost sides frist then top.
  11. sift sugar, salt and Cocoa together.
  12. cream butter or margarine,add part of sugar mixture gradually, mixing well.add remaining sugar, alternating with the warm milk, beat untill smooth.
  13. add vanilla, blend.
  14. makes about 2cups of frosting.
  15. sufficient to frost layers, top and side of cake.
