Udon Noodle and Forbidden Rice Salad
- Dressing
- 1-1/3 cups KRAFT Oriental Sesame Dressing
- 3/4 cup canned coconut milk
- 1/3 cup fresh lime juice Safeway 3 ct For $1.00 thru 02/09
- 2 Tbsp. red curry paste
- 4 tsp. lime zest Safeway 3 ct For $1.00 thru 02/09
- Salad
- 3 qt. cooked udon noodles
- 1 qt. cooked black rice
- 2 qt. napa cabbage, chiffonade
- 1 qt. snow peas, blanched, diagonally sliced into 1-inch pieces
- 1 qt. broccoli slaw
- 2 cups canned straw mushrooms, drained
- 1-1/3 cups seedless cucumbers, julienneds
- 1-1/3 cups peanuts, toasted, chopped Rite Aid Buy 1 Get 1 Free thru 02/06
- 1-1/3 cups red peppers, julienned
- 1 cup canned sliced water chestnuts, drained
- 1 cup yellow peppers, julienne Target 1 pkg For $2.99 thru 02/06
- 1 cup green onions, chopped
- 1 cup fresh cilantro, chopped
- to taste salt and black pepper
- 1/4 cup sesame seed, toasted
- Dressing: Whisk all ingredients until well blended.
- Refrigerate until ready to use.
- Salad: Combine all ingredients except sesame seed in large bowl.
- Add Dressing; toss to coat.
- Sprinkle with sesame seed.
