Grilled Beef Oaxaca Style

  1. Place dressing, 1/4 of roasted chile and lime juice in food processor or blender container; cover.
  2. Process until well blended.
  3. Place steak in shallow glass bowl.
  4. Pour dressing mixture over steak; cover.
  5. Refrigerate at least 2 hours or overnight to marinate.
  6. Drain; discard dressing.
  7. Place steak on oiled grill over medium heat.
  8. Grill steak 4 to 5 minutes on each side, or to desired doneness.
  9. Meanwhile, cook corn in microwave according to package directions.
  10. Combine with other 1/4 of roasted chile, finely chopped.
  11. Grill tortilla until warm.
  12. With knife slanted, cut steak across grain into slices.
  13. Serve with tortilla, cooked corn and fresh salsa.
