Steve's Double Stuffed Taters

  1. Wash potatoes.
  2. Poke holes in each potato, brush with olive oil and cover with foil.
  3. Bake at 400 for 1 and a half hours.
  4. When potatoes are close to done, mix remaining ingredients in bowl.
  5. When potatoes are done, reduce heat to 350 and remove from oven.
  6. Slice open carefully lengthwise.
  7. Remove meat and add to other ingredients.
  8. Mix everything well and carefully spoon back into empty potato skins.
  9. Return to oven and bake for 20 minutes (at reduced heat of 350).
  10. Once done, garnish with toppings such as bacon, cheese, sour cream etc.
  11. Whatever you wish.
  12. Serve hot and go on diet tomorrow!!
