Texas Caviar
- 6 cups Chopped Tomatoes
- 1 clove Garlic, Minced
- 1 can (15 Oz. Size) Black Beans, Rinsed
- 1 can (15 Oz. Size) Kernel Corn, Drained
- 1 whole Lime, Squeezed For Juice
- 1 whole Small Onion, Chopped
- 1 whole Green Pepper, Chopped
- 1 Tablespoon Dried Cilantro (or More, If Fresh)
- 2 whole Jalapeno Peppers, Minced, Optional
- 1/2 cups Zesty Italian Dressing
- 1 Tablespoon Salt
- 1/4 cups Sugar
- Stir together the dressing ingredients and pour over all the chopped veggies.
- Stir everything together and let sit 2 hours.
- Doesnt keep long in the fridge, only 1-2 days.
- To replace the zesty Italian dressing and fresh jalapenos, I add 1 cup pickled jalapenos and juice.
