Caldereta Recipe

  1. In a glass bowl, combine 2 tsp.
  2. garlic, vinegar, peppercorns and salt.
  3. Add in roast beef and marinate meat in refrigerator for 2-3 hrs.
  4. Drain marinated meat, reserving marinade.
  5. Heat veg.
  6. oil in a skillet.
  7. Brown beef, remove pan from heat and set aside.
  8. In another skillet over medium heat, combine margarine, garlic, onion and tomato sauce.
  9. Saute/fry about 5 min.
  10. Add in browned meat, wine, crushed bay leaf, water and reserved marinade.
  11. Bring to a boil, reduce heat and simmer till meat is tender.
  12. Then add in liverwurst and potatoes; cook till potatoes are done.
  13. Add in bell pepper and black pepper to taste and serve.
  14. Serves about 4.
