Cheesy Tomato Bruschetta

  1. Arrange bread on a baking tray.
  2. Drizzle over combined oil and garlic and bake at 220C for 5 minutes or until crisp and golden.
  3. Sprinkle bruschetta with 3/4 cup of cheddar cheese and top with combined tomato, onion, balsamic vinegar and basil.
  4. Top with remaining cheese, season to taste and serve.
