Chocolate Muffins
- 2 eggs, beaten
- 60 g margarine
- 80 g sugar
- 1 Tbsp chocolate liqueur
- 40 g walnuts, roughly chopped
- 60 g bitter chocolate
- 200 g flour
- 1 tsp baking powder
- Preheat the oven to 180C/350F.
- Put the margarine into a bowl with sugar and mix together well.
- Add beaten eggs slowly and mix very well, then add the chocolate liqueur, the roughly chopped walnuts and chocolate to the mix.
- Sift the flour and baking powder, add them into a bowl, and mix roughly - a powdery texture is ok.
- Spread olive oil or margarine on the inside of the cupcake pan, or use silicon cups.
- Then pour in the mixture to half way up each cupcake cup to avoid over filling.
- Bake for 15 minutes and remove to a cooling rack - the muffins are best eaten warm.
- If completely cooled, heat in microwave for about 30 seconds.
- These are super yummy with vanilla ice cream.
- Note: I use GODIVA's for the chocolate liqueur.
