Toasted Coconut Toffee Cookies
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 1 cup Land O Lakes Butter, softened
- 3 Land O Lakes All-Natural Eggs
- 1 teaspoon almond extract
- 1 teaspoon vanilla
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 3/4 cups coconut, toasted
- 1 (10-ounce) package English toffee bits
- Heat oven to 350F.
- Combine sugar, brown sugar and butter in large bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Add eggs, almond extract and vanilla.
- Continue beating until well mixed.
- Add flour and baking soda; beat at low speed until well mixed.
- Stir in coconut and toffee bits.
