Bailey's Chocolate Cheesecake

  1. preheat oven to 180C
  2. melt the grated chocolate using the double-boiler method.
  3. meanwhile beat together the cream cheese and sugar in a large bowl.
  4. beat in the eggs, one at a time.
  5. stir in the melted chocolate, the liqueur, the melted butter and the sour cream.
  6. combine well.
  7. pour the mixture into a prepared crust and bake for about 45 minutes.
  8. turn off the heat and prop open the oven door.
  9. let the cake cool to room temperature then chill.
