Bacon-wrapped Malanga
- 1 large Malanga (or Yautia)
- 1 dozen Bacon Slices
- 1 Boiling Salted Water
- Peel the root vegetable and rinse thoroughly.
- (Be careful, the skin is tough and kinda "hairy")
- Cut into 12 bite size pieces (not too small) and add to boiling salted water.
- Pre-heat oven to 375F.
- Once easily pierced with a fork or sharp knife, they're ready.
- Wrap each piece with a slice of bacon and evenly set on a non-stick oven dish.
- Cook in oven for 30-45 minutes or until bacon is fully cooked.
- Enjoy!
