Cinnamon Rollups

  1. Roll bread slices flat with a rolling pin.
  2. Mix cream cheese, egg yolk and 1/4c sugar.
  3. Spread a scant tbsp on each slice; roll up tightly.
  4. Mix remaining sugar and cinnamon in a shallow bowl.
  5. Brush rollups (including ends) with butter; roll in sugar mixture to coat.
  6. Place on cookie sheet.
  7. Refrigerate or freeze at least 2 hours.
  8. (To store, freeze up to 2 months)
  9. Heat oven to 400F.
  10. Bake rollups on cookie sheet 9 - 12 minutes until bottoms are glazed and golden brown.
  11. Remove immediately to a wire rack to cool.
  12. Cut each diagonally in 3 pieces.
  13. Eat warm or cold.
