Flora's Easy Does It Southern Tangy Tater Salad
- 4 medium Taters
- 1/2 cup of diced vidalia onion
- 1/2 cup of diced dill pickles
- 3 Eggs
- 1/2 cup Mayo
- 2 tbsp of Mustard
- 1 Salt to taste
- Peel taters and dice into bite size pieces.
- Put in a pot.
- Put eggs on top of the taters and cover them with water.
- Lightly boil until taters are fork tender.
- drain taters and eggs.
- then set aside to cool.
- Meanwhile you can chop your onions, pickles and peel and dice your boiled eggs.
- Add all ingredients into a large mixing bowl.
- *Note this makes a tangy tater salad.
- If you like a blander flavor you can cut the pickles, onion, and mustard back a bit.
- ** This needs to go into the fridge promptly.
- The longer it sits the better it will taste.
