Spinach Walnut Pesto
- 1/2 cups Extra Virgin Olive Oil
- 1/2 cups Walnuts
- 1/2 cups Parmesan Cheese
- 2 cloves Garlic, Minced
- 2 cups Spinach
- 1 teaspoon Dried Basil
- Salt And Pepper, to taste
- Combine ingredients in food processor or blender, and blend until it makes a thick paste.
- And thats it!
- I like to make big batches of this and freeze for easy meal preparation.
- Just pull it out of the freezer an hour or so before you want to use it to let it thaw.
- This is delicious over pasta or chicken, and even better with good Italian bread.
