Easy Minestrone made with Tomato Juice
- 1 Tomato
- 1/2 each Onion, carrot
- 1/8 Kabocha squash
- 1/4 Asian sweet potato
- 3 leaves, 3 mushrooms Cabbage, shiitake
- 2 clove Garlic
- 1 tbsp Olive oil
- 300 ml each Tomato juice, water
- 2 *Soup stock cubes
- 1 tsp *Salt
- 1 *Pepper
- Cut all the vegetables into 1 cm pieces.
- Mince the garlic and gently fry in olive oil.
- Add the carrots and onions, and cook over medium heat until the onions are translucent.
- Add all the vegetables except the sweet potatoes, and cook until soft.
- Add the water, tomato juice and all ingredients marked *.
- Bring to a boil, then reduce the heat to low and cook for about 30 minutes.
- Add any vegetables that become soft quickly (such as sweet potatoes) at the end.
- It's ready when the sweet potatoes are cooked through.
- Add Parmesan cheese and/or parsley if you like.
