Easy Minestrone made with Tomato Juice

  1. Cut all the vegetables into 1 cm pieces.
  2. Mince the garlic and gently fry in olive oil.
  3. Add the carrots and onions, and cook over medium heat until the onions are translucent.
  4. Add all the vegetables except the sweet potatoes, and cook until soft.
  5. Add the water, tomato juice and all ingredients marked *.
  6. Bring to a boil, then reduce the heat to low and cook for about 30 minutes.
  7. Add any vegetables that become soft quickly (such as sweet potatoes) at the end.
  8. It's ready when the sweet potatoes are cooked through.
  9. Add Parmesan cheese and/or parsley if you like.
