Sausage Stuffed Bell Peppers

  1. Preheat the oven to 400 degrees F. In a large skillet, over medium heat, brown the sausage, about 3 minutes.
  2. Add the onions, peppers, and celery.
  3. Season with salt and pepper.
  4. Saute for 4 to 5 minutes, or until the vegetables are soft.
  5. Add the rice and mix well.
  6. Season with salt and pepper.
  7. Cook for about 3 minutes.
  8. Remove from the heat and stir in the green onions and parsley.
  9. Season the bell peppers with salt and pepper.
  10. Spoon the mixture into the bell peppers.
  11. In a mixing bowl, combine the bread crumbs and cheese.
  12. Season with Essence and mix well.
  13. Sprinkle the crust over each pepper.
  14. Place the peppers in a shallow pan and add just enough water to cover the bottom.
  15. Bake for 30 minutes, or until the tops are crusty and brown.
  16. Serve hot
  17. Combine all ingredients thoroughly and store in an airtight jar or container.
  18. Yield: about 2/3 cup
