Bacon Roll-Ups

  1. Slice bacon in half to form twenty strips.
  2. In a small bowl combine softened cream cheese with sliced scallions and pepper.
  3. Remove crusts from bread.
  4. Line up 4 slices of bacon, slightly overlapping to form a square.
  5. Using a rolling pin, flatten the bread.
  6. Place the bread slice on top of the bacon.
  7. Spread the bread with the cream cheese mixture.
  8. Roll up bread and bacon as you would a rug.
  9. Secure with 4-5 toothpicks about an inch apart.
  10. Assemble remaining roll ups and place on baking sheet.
  11. Freeze until firm.
  12. Slice rollups into 4-5 pieces each secured with toothpick.
  13. Either refrigerate or freeze until ready for use.
  14. Preheat oven to 425 degrees.
  15. Place roll-ups on broiler pan so that fat collects in bottom pan.
  16. Bake until crisp, about 20-30 minutes.
