Sweet Citrus and Broccoli Rice

  1. Combine all ingredients for the syrup.
  2. Place over heat and simmer for about 20 - 25 minutes.
  3. Strain through a sieve.
  4. This is about double the amount needed and should make enough for 2 times or use in stir fry.
  5. Store in refrigerator.
  6. Heat 2 tbsp oil and saute the onions over high heat for a minute or two before adding the broccoli florets; toss.
  7. Add the garlic to the skillet.
  8. Season with a pinch of salt and pepper and cook the broccoli until tender but with a bite, 5 minutes.
  9. Pour over the broccoli, half of the reserved syrup, adding more if you like it on the sweet side; simmer for a minute, tossing to coat.
  10. Add 4 or 5 cups of cooked rice and squeeze the juice of 1/2 a lemon; heat through.
