Sweet Citrus and Broccoli Rice
- 1 lb broccoli floret, cut very small
- 2 small onions, chopped
- 1 garlic clove, minced
- 2 tablespoons vegetable oil
- salt and pepper
- 4 -5 cups cooked rice
- juice 1/2 lemon
- 23 cup sugar
- 2 cups water
- rind 1 lemon, no white pith (cut into strips)
- ginger, 1 inch rough chopped
- 2 garlic cloves, bruised
- 12 teaspoon chili flakes
- 1 tablespoon soy sauce
- 1 tablespoon fish sauce
- salt and pepper
- Combine all ingredients for the syrup.
- Place over heat and simmer for about 20 - 25 minutes.
- Strain through a sieve.
- This is about double the amount needed and should make enough for 2 times or use in stir fry.
- Store in refrigerator.
- Heat 2 tbsp oil and saute the onions over high heat for a minute or two before adding the broccoli florets; toss.
- Add the garlic to the skillet.
- Season with a pinch of salt and pepper and cook the broccoli until tender but with a bite, 5 minutes.
- Pour over the broccoli, half of the reserved syrup, adding more if you like it on the sweet side; simmer for a minute, tossing to coat.
- Add 4 or 5 cups of cooked rice and squeeze the juice of 1/2 a lemon; heat through.
