Bagel Cheese Pastries
- 4 cinnamon-raisin bagels, halved
- 1 8-oz. pkg. nonfat cream cheese, room temperature
- 1/4 cup granulated sugar
- 18 tsp. ground cinnamon
- 2 tsp. lemon juice
- 1 egg or 1/4 cup egg substitute
- 1 tsp. vanilla extract
- 2 cups sliced fresh fruit
- Preheat oven to 375F.
- Scoop out some of insides of bagel halves to make shells.
- Reserve bagel insides for another use.
- Mix together cream cheese, sugar, cinnamon, lemon juice, egg and vanilla usingan electric mixer until ingredients arethoroughly blended.
- Carefully spoon mixture into bagel shells.
- Set bagels on cookie sheets.
- Bake for 15 minutes, or until filling sets.
- Remove from oven, and set aside to cool.
- To serve, top each half with fresh fruit of your choice.
