Ukrainian Crackling Korzhyky Biscuits

  1. Sift the flour with the dry ingredients twice.
  2. Mix in the cracklings or bacon and the melted fat.
  3. Beat the eggs and reserve 2 tablespoons for glazing.
  4. To the remaining portion of the eggs, add the cream and stir into the flour mixture with a few swift strokes.
  5. Handle the dough as little as possible.
  6. Place on a slightly floured board and pat to about 3/4 inch in thickness.
  7. Cut into diamonds with a knife, or into rounds with a cooky cutter.
  8. Place on a greased baking sheet, brush with the reserved egg, and sprinkle lightly with the caraway seed.
  9. Bake in a very hot oven (450F) for 10 to 12 minutes.
