Fresh Raspberry Pie
- 4 cups fresh raspberries
- 1 cup sugar
- 3 tablespoons cornstarch
- 1 12 cups water
- 1 baked pie shell
- Crush 1 cup berries in small saucepan and bring to a boil with 1 1/2 cups water.
- Lower heat and simmer for 3 minutes.
- Strain berries through a small mesh strainer or cheesecloth, reserving juice.
- Return juice to saucepan and add sugar and cornstarch.
- Boil for 3 minutes.
- Allow to cool.
- Fill baked pie shell with 3 cups fresh berries.
- Pour the juice mixture over the berries and chill.
