Fresh Raspberry Pie

  1. Crush 1 cup berries in small saucepan and bring to a boil with 1 1/2 cups water.
  2. Lower heat and simmer for 3 minutes.
  3. Strain berries through a small mesh strainer or cheesecloth, reserving juice.
  4. Return juice to saucepan and add sugar and cornstarch.
  5. Boil for 3 minutes.
  6. Allow to cool.
  7. Fill baked pie shell with 3 cups fresh berries.
  8. Pour the juice mixture over the berries and chill.
