Curry-Pumpkin Pork Chops
- 2 pork chops
- 2 tsp Madras curry powder
- 3/4 tsp garlic powder
- 1/3 tsp ground white pepper
- 1/2 tsp onion powder
- 1 pumpkin pie spice; to taste
- 1 heaping spoonful easy pumpkin pie mix per chop
- 1 pinch kosher salt
- 1 peanut oil; as needed
- Cover pork chops with enough oil to coat.
- Season with curry powder, onion powder, garlic powder, and white pepper.
- Bake at 300 for approximately 20 minutes or until pork reaches desired doneness.
- After chops are cooked, top with pumpkin pie mix.
- Sprinkle pumpkin pie spice over the pumpkin puree.
