Spiced Ice Cream
- 2 12 cups half-and-half or 2 12 cups light cream
- 34 cup sugar
- 12 teaspoon fresh nutmeg
- 14 teaspoon ground cardamom
- 14 teaspoon saffron thread, slightly crushed
- 1 12 cups whipping cream
- 1 tablespoon vanilla
- In saucepan, bring mixture of 11/2 cups half and half, sugar and spices just to simmer, stirring often.
- Let cool to room temperature.
- Cover and chill 2 hours.
- Combine spice mix with whipping cream, 1 cup half and half, and vanilla.
- Mix well.
- Freeze in 4-5 quart ice cream freezer according to manufacturer's directions.
- Ripen 4 hours.
