Bok Choy Apple Slaw
- 13 cup sour cream, light
- 13 cup mayonnaise, light
- 2 tablespoons white wine vinegar
- 2 tablespoons sugar or honey
- 1/2 teaspoon celery salt
- 1/4 teaspoon salt
- 1 pound bok choy very thinly sliced, trimmed, 6 cups
- 1 large apples, granny smith julienned or shredded
- 1 large carrots julienned or shredded
- 1/2 cup red onion slivered
- Whisk sour cream, mayonnaise, vinegar, sugar (or honey), celery salt and salt in a large bowl until smooth.
- Add bok choy, apple, carrot and onion; toss to coat.
